Ozone is a molecule with three oxygen atoms and is highly unstable. It will rapidly give up the third oxygen atom to other materials around it. This oxidises that material and leaves no residue or unacceptable by-products. It breaks down the cell walls of microbes and makes it an effective sanitiser. It can be used in water of all types as well as being sprayed into processing areas as a gas. It is produced from air and therefore requires no transport. Ozone Generators can be installed in new and existing food businesses as it is an ideal sanitiser The Food Standards Code allows for ozone to be used as both an ingredient and processing aid, as well as for bleaching and washing agent in food processing (FSC 1.3.3 Clauses 11 and 12). AQIS has also approved it for export licenced food businesses. As of 2008, it is also HACCP Accredited. |
