Foodie Friday – Best Pizza

Fine Food saw the awarding of the Dairy Farmers Best Pizza prize to Monica Cannataci.

This is the third time that the business she works for has won the award. At first she won the Gourmet category and then went on to win the Best Pizza prize with her Wagyu Bresaola pizza.

This delicious sounding pizza comprises wagyu bresaola, tomato chutney, goat’s curd mousse, baby beetroot, horseradish, pecorino cheese, watercress, micro herbs and lemon oil.

Monica’s prize includes $30 000 and the right to compete in the World’s Best Pizza competition in Las Vegas in March 2011.

So what is bresaola? – it is an Italian speciality which has been in use since the time of Leonardo da Vinci. It is extremely lean beef with almost no visible fat that is then salt cured and air dried.

Pizza – depending upon your point of view Pizza may have come from the Romans, the Greeks or even the Middle East. One thing is certain, that the Pizza, as we know it, was first made by Raffaele Espito in Naples in 1889 for the Italian King and Queen. By having layers of green (basil), red (tomato) and white (mozarella) he created a pizza that looked like the Italian Flag and he called it the Margherita, in honour of the Queen.

Friday’s Green Tip – when considering the purchase of a piece of equipment, don’t just think about the price and use, consider the efficiency as well. More efficient equipment will use less power and water and this is better for the environment and certainly saves money.

BPA to be declared as toxic in Canada

After two years of assessments and debate, the Canadian government is set to declare that bisphenol-A (BPA) is a toxic substance. This will make it the first country in the world to do so.

Health officials are saying that based on the assessments undertaken during the last two years, the endocrine disrupting propoerties of BPA make it unacceptable to be consumed in any quantity.

The Canadian authorities are primarily concerned about baby bottles and canned foods. Many large retailers are now banning the use of BPA in any baby related containers, including bottles. Manufacturers are working on alternative coatings for formula and other food cans.

Currently Food Standards Australia New Zealand (FSANZ) continues to monitor the situation closely, but currently considers that the amount of BPA that people will come in contact with on a daily basis is not above a safe level.

This is one to watch.

New US food safety laws stall

It would seem that the US is going to have to go back to the drawing board as the Food Safety Modernisation Act stalls in the Senate.

 The hold up is due to at least one Senator wanting to know where the money is coming from, to fund the significant changes that would come with the passing of the Bill.

Food advertising reaches new levels

A large chicken fast food chain in the US has a burger with no roll, which they call the Double Down Burger. It has two chicken fillets (either fried or grilled) bacon, cheese and a specially developed sauce. It  is not available in Australia.

It was released in April and sales were around 10 million units in it’s first month. It has comparatively high fat and salt contents. Some love it  for the flavour and unique concept, whilst others are totally against it due to the nutritional issues.

They are now going to pay $US500 to selected university students to be human billboards, for wearing sweatpants advertising the burger. Considering the nutritional issues, it seems to some as a unsusual combination for advertising.

It just makes you ask how far advertisers and people will go to advertise and market products.

Have just posted another clip on YouTube in my Food Myths series on the GreenFoodSafety channel.

This one talks about the idea that most have of the last food eaten being the one that caused a person’s food poisoning.

It is not always so. Onset, or the time taken for food poisoning symptoms to show, is dependent upon a variety of factors. These factors include; the health of the person, the type of bacteria, the amount of bacteria, the food itself and the way it has been handled.

Foodie Friday – music affects taste

A recent study is showing that the type and volume of music has an effect on both the flavour and texture of foods.

FSANZ asks for comments on Sprout standard

Many people don’t realise that sprouts and other vegetables can be as much a cause of food poisoning as the commonly considered poulty and seafood.

There have been several recent food poisoning outbreaks as a result of Salmonella in sprouts, both here in Australia and in the USA.

Food Standards Australia and New Zealand (FSANZ) is in the process of developing a Primary Production Standard for Sprouts.

This standard will set food safety requirements for sprout producers. The Proposal (No. P1004) is undergoing it’s second assessment and FSANZ is inviting comment from the public and other interested parties by Monday 18 oct 2010.
